A 2021 Semillion Sauvignon Blanc from the Margaret Wine region of W.A.

The Semillon and Sauvignon Blanc grapes for this wine were harvested early in the morning Margaret River to keep them fresh. After picking, the grapes were taken to the winery where they were pressed and fermented separately. A small part of the Semillon was fermented in a barrel to add more flavour. Once fermentation was complete, a little bit of sulphites was added to keep the wine fresh before the two wines were mixed together and bottled.
This wine has fresh, zesty aromas like crushed lemongrass and tropical fruits. It tastes of citrus and passionfruit, finishing with a crisp, refreshing feel.

The Semillon for this wine was harvested from Margaret River and carefully blended with Sauvignon Blanc. Both varieties were machine harvested in the cool early morning to retain freshness then carted to the winery for processing. Each parcel was pressed separately to tank, allowed to settle then racked to tank for fermentation. 5% of Semillon was fermented in barrel to add a touch of complexity. Once dry, a small amount of sulphur was added to retain freshness then the wine was racked off lees, then the 2 batches were thoughtfully blended, then prepared for bottling.
The wine has fresh zesty aromas of crushed lemongrass and tropical fruits with intense flavours of citrus and passionfruit with a crisp quenching finish.
